If you really want to impress, a batch of Chef Eric’s Chocolate Chip cookies (actually handed down from his mom, Joan) is guaranteed to do the trick!
1 cup Butter
1 cup Sugar
1 cup Brown Sugar
2 each Eggs
2 teaspoons Vanilla Extract
3 cups All Purpose Flour
1 teaspoon Baking Soda
1 teaspoon Salt
12 ounces Chocolate Chips
– Cream the butter, sugars, eggs and vanilla in a mixer with a paddle
– Add the flour, baking soda and salt and mix just to combine
– Add the chocolate chips and mix just to distribute them
– Remove from the mixer, cover tightly and refrigerate over night
– Remove from the refrigerator – Pre heat the oven to 350
– Scoop the dough out on to an un-greased cookie sheet
– Bake about 10 minutes, until golden brown
– Cool slightly before removing them from the tray
