½ Medium Sized Onion – fine dice
3 Cloves Garlic, chopped
1 Cup Extra Virgin Olive Oil
3 Ounces Balsamic Vinegar
3 Each Tomatoes, diced
To Taste Salt and Pepper
1-2 Ounces Fresh Basil, chopped
Place your diced tomatoes in a bowl and set aside.
Heat the olive oil in a sauté pan.
Sauté off the onion and garlic, do not brown.
Pour mixture over the tomatoes.
Add the balsamic vinegar.
Season with salt and pepper.
Cool in the refrigerator.
Stir in the fresh basil.
